Four Seasons Salad with Prunes and Lemon Vinaigrette

Ingredients Lemon Vinaigrette
3/4 cup lemon juice
1/2 cup plus 1 Tbsp olive oil
3 Tbsps sugar
2 Tbsps dried basil
1 1/2 tsps grated lemon zest
1 1/2 tsps salt / 3/4 tsp freshly ground black pepper

Ingredients Salad
24 cups of mixed salad greens
18 ounces Sunsweet® Pitted Prunes
3 small golden delicious apples, peeled and shredded (tossed in lemon juice to keep from browning if shredding ahead)
3 medium carrots, peeled and shredded
1 1/2 cups thinly sliced walnut pieces

Whisk the dressing ingredients together and refrigerate until ready to use. In a large bowl or hotel pan combine the remaining ingredients (or in batches as needed). Just before serving, whisk the dressing again, drizzle over the salad ingredients, and toss to combine. MAKES 24 SERVINGS
