Harvest Prune Apple Salad

Ingredients Poppy Seed Dressing
2 cups light mayonnaise
1/2 cup cider vinegar
1/4 cup vegetable oil
1/4 cup plus 1 Tbsp sugar
2 1/2 Tbsps poppy seeds
2 Tbsps salt – table salt

Ingredients Salad
4 cups Sunsweet® Pitted Prunes
2 cups thinly sliced red onion
2 cups coarsely chopped red apple(tossed in lemon juice to keep from browning if chopping ahead)
4 heads romaine lettuce, cored, washed, and coarsely chopped (about 1.5 lb. each, 6 lbs. total)
1 1/3 cups walnut pieces (optional)

Whisk the dressing ingredients together and refrigerate until ready to use. In a large bowl or hotel pan combine the remaining ingredients (or in batches as needed). Serve the dressing on the side or just before serving, whisk the dressing again, drizzle over the salad ingredients, and toss to combine. For a lower fat option, substitute plain fat free yogurt for mayonnaise. MAKES 24 SERVINGS
